Jamie’s Coconut Cake Jamie’s Coconut Cake

Servings: 1 three-layer cake
Prep Time: 30 min
Cook Time: 25 min
Difficulty: Easy

Ingredients Add to grocery list

Basic 1-2-3-4 Cake recipe, but substitute 1 cup canned, unsweetened coconut milk for regular milk

3/4 cup sugar
1 cup sour cream
4 tablespoons milk
1/2 cup flaked, sweetened coconut

7 Minute Frosting recipe
Flaked, sweetened coconut for sprinkling





Follow directions for Basic 1-2-3-4 Cake, substituting coconut milk for regular milk.  While cake is baking, prepare filling.  Stir together sugar, sour cream, milk and coconut in a bowl until well blended.  Remove cake layers from oven and allow cake to remain in pan as you prepare to stack and fill.  Remove first layer and invert onto cake plate.  Using the wrong end of a wooden spoon, poke holes approximately 1 inch apart until entire cake has been poked.  Spread one third of filling mixture on cake layer.  Top with second layer, repeat process.  Top with last layer and repeat process again.  (As I stack layers together, I stick them with toothpicks to prevent cake from shifting.)  You can place the cake in the refrigerator for 3 days to allow it to absorb the filling mixture.

Prepare 7-Minute Frosting.  Frost top and sides of cake.  Sprinkle top and sides of cake with additional coconut.

I Haven't Tried making this cake but I have a disability I used 2 cook all the time but due 2 my disability I can't anymore but my daughter & husband does it for me and I am sure this cake is awesome all of your recipes are all great & I'm sure he got most of them from his mother lol from our Family 2 Your's We Hope You & Yours Have A Happy 4th Of July. I made this cake over the weekend for my son, who asked me to make him a coconut cake, and he loved it! It was very easy to make and I only let it sit in the fridge for 24 hours for the filling to set. It was very moist and the 7-minute frosting came out great -- and it was my first time trying to make this frosting. It was a bit too sweet for my taste but my son loved it so much that he wouldn't let me give any away to family!!! I do love the coconut taste of the cake and have had small pieces and carefully scraped off and left a very thin layer of icing on mine. Very good cake and thank you for the recipe! I'm sure my son is going to request this for his birthday too!!!

I never like to ever leave comments ....BUT I feel I must warn people before they spend the 3.55 a can on coconut milk ...the 2.42 on coconut ...etc. I read reviews that said this cake was dry. But I just assumed..they did not follow the recipe exactly OR they did not wait the 3 days. I followed this recipe EXACTLY. This cake is DRY and it DOES NOT taste like coconut. I cannot for the life of me understand why Jamie loves this cake. The only thing I figure is that there is some secret that Paula does not give out...this cake is NOT GOOD. If you want a wonderful cake make the "Better than ...cake " which has coconut...or her Vanilla wafer cake...which is scrumptious!

I am looking for the Best ever coconut cake recipe that was featured on the cover of the march/april 2011 paula deen magazine. If I recall, it had lime extract as an ingredient. I cannot find it on the web and my magazine pages 45 and46 are torn out. We made it once and it was delicious.

Miss Paula, I could kiss you square on those lips of yours for this cake recipe! I've been making it for the last few years and everytime there are never any leftovers. The first time I made it was for my Father and Step Mother's wedding and have made it at least once a year since. So moist and fluffy and that seven minute frosting is amazing! Anyway, thank you for this and all your other family recipes you share.
